Butternut Squash and Kale Hash

Preheat oven to 400 degrees. In a large metal bowl, toss butternut squash with a drizzle of olive oil and a sprinkle of salt. Spread on a lined baking sheet and place in oven 30 minutes or until almost tender but still a bit snappy!

Place hot squash and all rest of ingredients in a large metal bowl and season. Place in a large baking dish and cover with tinfoil tightly. Place in oven and roast until squash is tender and kale is very bright, about 20 minutes.
