Summer Squash Roll Ups

Using a mandolin, slice zucchini longways on the thickest setting.

Set a grill pan over medium high heat and add a little olive oil. Grill slices 2-3 minutes per side, seasoned lightly with salt and pepper. Wait until grill marks appear and zucchini is almost tender. Remove from heat.

In a small bowl, combine all rest of ingredients and stir until mixture is creamy.

With a metal spoon, spread 2 teaspoons cheese mixture and roll up. Place seam side down and slice in half. Serve or store until party!
